Pumpkin Ravioli

The Vegan BLT
This is probably my husband’s favorite lunch. It’s mine too. I never liked bacon but for some reason I love Tempeh bacon. It is smoky and sweet and deliciously not greasy.
It’s funny because one of the key ingredients is liquid smoke. This stuff creeped me out forever and I refused to buy it. Then one random day I craved a BLT so bad that I forced myself to buy some....
Vegan Thanksgiving
What a great night!
This weekend we drove up to Seattle to hang out with our friend Vince. His co-op has an annual Vegan Thanksgiving and we went up early to help him out. We had a blast cooking and laughing and helping Vince make his amazing green bean casserole- YUM!

Vegan Thanksgiving Idea#2: Pecan Pie
This is a recipe from my FAVORITE bakery in Portland. Maybe in the world!
I used a shortbread crust recipe which is incredibly easy: it’s basically vegan butter, flour and powdered sugar.

Vegan Rice Pudding
I love pudding and custards. On rainy days my mom would have custard and tea ready for me when I came home. So this simple dessert is my comfort food fore sure.
Rice Pudding- 2 to 3 servings
2 1/2 c non-dairy milk
1/3 c white rice
1/8 tsp salt
1/4 c sugar
1 tsp vanilla
1 tsp cinnamon

Mexican Hot Chocolate Snickerdoodles
If you LOVE mexican hot chocolate like I do, these cookies will blow your mind. The recipe is from the Post Punk Kitchen where I always seem to find awesome recipes.

I have never attempted stroganoff before, even when I was a meat eater. Traditionally, stroganoff is a creamy Russian beef dish… which never really appealed to me. But this recipe from Vegan with a Vengeance, is so warm and has so much flavor- it’s the perfect winter recipe to get cozy with.

Pumpkin Smoothie
This is super easy and delicious. I love it because it tastes like pumpkin pie in a glass!
Blend
1 frozen banana
1/2 a cup pumpkin puree
2/3 cup cold almond milk
1/2 tsp agave nectar or sugar
3 shakes of cinnamon
1 shake of nutmeg
Serve with a sprinkle of cinnamon on top.

Pumpkin Chocolate cake with Cinnamon Icing
Tonight we hung out with some friends and brought this cake. I couldn’t decide what to bake at first but we’ve had this can of pumpkin puree in the pantry for a couple of weeks now and I had been dying to open it up. I found this recipe on havecakewilltravel.com and it is super yummy. I added a cinnamon icing which, in my opinion, takes this cake up a notch.

BBQ Seitan Sandwich
Though I never cared for BBQ when I was a carnivore, for whatever reason, I now crave it all the time. Back in the bay, we would frequent Souley Vegan; a bombdotcom soul food place in Oakland. It had the BEST barbecue tofu sandwich ever. Oh my GOSH! Just thinking about it makes my mouth water!

Vegan Almond Pear Galette
So I haven’t worked out all the kinks to this recipe.
Instead of using a jam or syrup for the base of the galette, I used a custard… so maybe that makes it a tart?
