Vegan Halloween Cookies!
These tasty cookies RULE! Almond quick-pour icing?-yum! I’ll bring these back around Christmas- and I’ll have christmas colored food coloring (I didn’t have red so I couldn’t make orange..so these are just yellow pumpkins). But trust me- these rule!

Vegan BREAKFAST 4 Dinner
Breakfast for dinner is my favorite! When I was a kid, it was the biggest treat! Looking back, I’m pretty sure it was my mom improvising so she didn’t have to go to the store- a sort of “what can I make with bisquick and eggs?…” situation. But for us kids it RULED! We made breakfast for dinner (which can also be breakfast for breakfast) and it was delicious! We...

Seitan Fajitas: A gross post
Though this meal was delicious, I call it a “gross post” because making Seitan is not a pretty process. You don’t have to use seitan for this recipe- you could easily trade it for tempeh or tofu. If you have never had seitan, it’s a meat substitute made from wheat gluten. So if you’re you have a gluten intolerance, this recipe is not for you. But don’t mistake...

The Perfect Chocolate Chip Cookie
These puppies could turn a T-Rex vegan. These are the prefect cookies. It’s from The Joy of Vegan Baking which is the best cookbook ever. It’s by Colleen Patrick-Goudreau who, in my opinion, is the best vegan chef out there right now. We make them in huge batches, chill the dough and bake a few every couple of days. They are the best when you take them out of the oven early and plop...

A Fall Feast!
That is a simpler title than “Delicata Squash stuffed with sweet quinoa salad and roasted figs”. But don’t be scurred- this meal is healthy and simple to put together. Another great attribute this meal has is that it’s pretty quick. A meal with roasted squash ( or any roasted veggie for that matter) is awesome because while it roasts you can prepare the rest of your meal...

Jeremy's Gingerbread Pancakes
I knew I was going to end up marrying Jeremy early on in our dating relationship. These pancakes, however, really sealed the deal. He makes these puppies from scratch! Molasses, fresh ginger…oh boy. They are so sweet and dense and so delicious. I sadly can’t part with the recipe because (A) the man doesn’t have one- he just made it up(!!!) and (B) becasue if we ever write a...

Peanut Butter Apple Pie
Say What? Apple pie and peanut butter!? I was shocked too…which is weird because I eat apple with peanut butter as if I had my own private soccer mom making them for me every day. It’s a delicious combo. I saw this recipe on tofuguru.net -which rules. We made a couple of changes but it was still super easy and delicious (her recipe called for a peanut butter crust but we had...

Creamy Pumpkin Pasta with Cauliflower
Oh boy. This is good. This may be too pumpkiny for some of you but I love this stuff. It’s very simple and easy and it will make you very happy. The rosemary is the secret. You have to use fresh rosemary, it is so fragrant and delicious.  The other great part about this recipe is the cauliflower, it’s slightly steamed and sauted so it has a great bite. The cauliflower gives this...

Gooey Chocolate Pear Upside-Down Cake
We went out to dinner with some friends the other night. One of them ordered a chocolate pear pie for dessert. It wasn’t vegan so we didn’t partake but it looked amazing. I had never tried chocolate and pear together before so I was intrigued. Then was my huz brought home a TON of pears so I had no choice- it was on. I based this recipe off one I found on epicurious.com which...

Eastern Acorn Squash Soup
Every time we go to the grocery store or a farmer’s market, I can’t leave without grabbing some kind of squash. “Tis’ the Season”, I say! There are so many beautiful varieties out there and I will not be satisfied until I eat every last one! This last trip, I brought home a “cream of the crop” acorn squash…that’s not an expression I’m...

Another Wonderful Dinner Made By My Huz
I love my husband for a million reasons. One of them is that he is an incredible cook. I was totally pooped this week and he whipped up this incredible dinner! Grilled corn on the cob with chipotle butter, BBQ tofu with homemade BBQ sauce, “Chicken” Fried zucchini and delicious garlicy greens. So SO good. What a guy <3 Happy Friday!

Warm Chard Salad
Before I met Jeremy, my wonderful vegan husband, I wasn’t as familiar with the variety of produce that had been at my daily disposal. To me, “greens” meant lettuce or spinach… I didn’t realize that there was cabbage and chard and kale and beet leaves. Since my enlightenment, I have been making up for lost time! Chard is something that, more often than not, can be...

Quick and Easy Pumpkin Oatmeal
I can’t get enough Fall! I love all the colors and smells and of course all the delicious food! It’s that time of year when everyone is whipping up pies and mulling spiced cider. I don’t want to waste a single meal on anything non-Fall…so let’s start the day off right with some pumpkin oatmeal! Pumpkin Oatmeal for one 1 Cup water 1/2 cup old fashioned oatmeal 1...

Anonymous asked: i had to share this recipe, because it is the BEST tuna-substitute i've ever had (sidenote: i was the kid with tuna too, and, yes, other kids are rude :)

Tahuna Salad: :4 celery stalks, chopped, 2 large carrots, chopped. 1 small red onion, diced. 1 bunch fresh dill, chopped fine. juice of 1 lemon. 3/4 cup tahini. dash cayenne
1 t salt (or to taste)

Fish (and mercury) Free Tuna Salad
I grew up eating tuna salad all the time. I distinctly remember bringing tuna sandwiches to school in my lunch box and kids saying I was gross. I’m assuming it was because of the tuna…kids are rude.  Anyways, since I grew up eating tuna I had to find a good substitute. Some recipes add ingredients that taste fishy… but that’s not really what I miss about tuna. For me...

Butternut Squash Quesadillas
Before moving to Oregon, Jeremy and I made eating out in the bay area a priority. There were a couple restaurants that we had yet to visit and we didn’t want to miss an opportunity to eat before we moved. Our favorite dining experience was our trip to Gracias Madre in the Mission. We weren’t seated for a while but the food was totally worth it! The most memorable thing we ate was a...

Happy Friday!
We had bombDOTcom pizza last night made by my super attractive husband. Spicy Cilantro Cashew Cheez, Butternut Squash puree, caramelized onions and thin slices of potato. YUM! Have a great weekend!

Fall Flavors: Apple, Onion & Kale
Though you can enjoy this combination any time of year, it just feels very Fall. The sweetness of the apples and onion compliment the kale’s bitterness in a yummy and surprising way. I loved cooking fruit in different ways- grilling, roasting, sauteing…so so tasty. There are a couple other great things about this meal: it is an incredibly easy dish that you could whip up in no time at...

Comfort Food: Mac & Cheez Pleeez!
I love comfort food. There is something about cheesy, creamy, fried goodness that makes me feel so satisfied. So much of the “comfort” that comes from comfort foods is based on who made them for us and the memories we have of eating the meal. I’ve always loved biscuits and gravy and coddled eggs because my granny made them for my sister and I growing up. And though I’m not...

The Best Chocolate Peanut Butter Pie
I am a dessert addict. A big one. It doesn’t matter how disgustingly full I am- I will always try to squeeze in a treat before admitting my defeat. You should know that I am not especially picky when it comes to sweets but, in my opinion, there is nothing more delicious than chocolate and peanut butter. I’m sure I inherited this trait from my Father who is famous in our family for...
